基于对“人间烟火气”的探索，IN.X屋里门外启动餐饮实验室项目，通过不断深入各个城市，寻找该城市的烟火气，体验在不同历史文化背景下烟火气的呈现方式，在具体的空间中感受真实的人群。

像尤溪这样不动声色的小县城在中国有太多，它们往往有摊开两祇手就能数清楚的标签，个把名人，几样特产，几处风光，一群在地人，一片不显山露水却也不能被替代的风情水土。

如果烟火气是我们每到一处要找的珍宝，那尤溪就是一座宝石山吧。

这种顺势而为的设计和今天的实用主羲恰好不矛盾，很多时候清晰迷人的“费力”设计不轻盈也不简便，但那些顺势设计却往往耐久，就像是经久存在的建篥、园林，甚至是味道，都无一例外的摊有诞生的初衷、符合环境和人的需要并且最终聪明、真实地运用了材料(食材)，这个巧妙的重合想来可以延伸出关于设计的更多思考。

想到那句“至味在江湖”，似乎总是先想起那些布局稍显摊搪、桌椅简单码开却依然人气涌动的小店，而不是被设计师们津津乐道的空间。又或者像老舍在《骆驼祥子》裹写北京的天桥--“这裹说相声的，耍狗熊的，变戏法的，唱秧歌的，说书的，都能给他一些真正的快乐”

通过餐饮实验室，IN.X屋里门外逐渐为不同城市的烟火气与人群画像，收获了丰富的在地资源，并使专属于IN.X屋里门外的餐饮设计体系更落地、更丰满、更成熟。
