一个是陈晓卿口中“把握云南菜命脉的烹饪艺术家”

另一个是餐饮人口中“懂商业的空间设计师”

二者叠加,魔法奏效

 

上海泓0871臻选云南菜吴淞路店揭幕,由IN.X屋里门外吴为操刀完成了颇具颠覆性的内部空间设计,而这也标志着曾经高举“滇菜入京”旗帜而后长盛不衰的泓0871正式入沪,创始人刘新“野而精”的私密菜单也将在“魔都”食客挑剔的就餐需求中展开试炼,而呈现打开新市场的空间首秀,吴为也未走寻常路。

永平黄焖鸡、宾川酸菜红豆黑皮子、松香小刀鸭、手撕乳扇三年酵香火腿、酱肉菌香破酥包、水酥饼......泓0871的拳头菜单上样样都是看家菜,作为滇菜大厨,刘新从不缺少菜式的灵感,作为品牌主理人,上海泓0871的面貌却有点模糊。

云南和上海——一个边陲神秘,一个都会繁华;一个是山林迷藏,一个是摩登盛景;一个因为丰饶而魔幻,一个因为魔幻而丰饶。一桌滇菜沪上开席,设计师决计把色香味煨进空间里,既是云南菜的色香味,亦是上海城的烟火人情。

在夯土、木板、石材、金属的巧妙互动中,原始粗犷、拙朴素寂、简明现代、摩登雅趣在空间中各有依托,既统一为一个整体,又各自在空间奏鸣的起承转合里独立成章,在上海都市夜色里,泓0871与之融合,又自成一脉。

As a Yunnan cuisine chef, Liu Xin has never lacked the inspiration of the dishes. As the brand manager, Shanghai Hong 0871's appearance is a bit vague.

Yunnan and Shanghai-one is a mysterious border, the other is prosperous; one is hidden in the mountains and forests, the other is modern scenery; one is magical because of abundance, and the other is fertile because of magic. A table of Yunnan cuisine is opened in Shanghai, and the designer decided to simmer the color and fragrance into the space. It is not only the color and fragrance of Yunnan cuisine, but also the fireworks of Shanghai.

In the ingenious interaction of rammed earth, wood, stone, and metal, primitive roughness, simple and simple, concise and modern, and modern elegance are supported in the space. They are unified as a whole, and each form an independent chapter in the resonance of the space. , In the night of Shanghai city, Hong 0871 merges with it, and is in its own line.

泓0871的烟火剧以炫目开场,酒窖吧台区与走廊以材料的明确区别被一分为二,视觉分割明确空间情绪的转换。一体黄铜吧台与怀旧粗糙的灰色水磨石构成质感当代节奏强烈的酒吧区,酒窖通明阵列有如巨大的现代雕塑,黄铜线条与灯光横纵穿梭,都市的动感和力量可以在这里积蓄或释放。

幕落又升,散座区是古老记忆与现代情节的穿插叙事。一半是拙朴迷人的红色夯土,一半是弧形里面的现代包裹,整个区域在优雅与怀古中被巧妙平衡。黑色水磨石与剧场垂幕般窗帘将弧形落座区刻画出明确的节奏感,与之相对应的是夯土墙前蒸腾的古早典雅。材质的冲突交融在有限的空间里刻画出时间长河中截然不同的场景切片——属于云南、属于上海、属于过去、属于未来。

情绪与故事在进入茶室空间的一刻凝结成静止与感怀。阳光泻入,穿过木质格栅移门、穿过轻薄纱幔,铺满油润古朴的木地板与斑驳的天花墙面,最后的注脚写在狭长的餐桌与当代艺术画上,之前复杂冲撞的情绪得到统一,无限后退的昨日故事与当代审美在这里恰好相遇又自洽,构成一个更加包容的新场所。

剧目进入尾声,人群转入私密空间,灯光低垂,夜色如洗,窗外的上海是真切的生活,但在泓0871的这一幕间,亦是一块人间烟火气的绝妙背景。

The wine cellar bar area and the corridor are divided into two with a clear distinction of materials, and the visual division clearly defines the transformation of space and mood. A one-piece brass bar and nostalgic rough gray terrazzo form a bar area with a strong contemporary rhythm. The bright array of wine cellars is like a huge modern sculpture. The brass lines and lights travel horizontally. The urban dynamics and power can be accumulated or released here.

The curtain falls and rises again, and the scattered area is an interspersed narrative of ancient memories and modern plots. Half is the simple and charming red rammed earth, half is the modern package inside the arc, the whole area is cleverly balanced in elegance and nostalgia. The black terrazzo and theater curtain-like curtains portray the arc-shaped seating area with a clear sense of rhythm, which corresponds to the ancient elegance of the transpiration in front of the rammed earth wall. The conflict and blending of materials in a limited space portrays completely different scene slices in a long river of time-belonging to Yunnan, belonging to Shanghai, belonging to the past, and belonging to the future.

Emotions and stories condense into stillness and feelings the moment they enter the tea room space. The sun pours in, through the wooden grille sliding door, through the thin veil, covered with oily rustic wooden floors and mottled ceiling walls, the last footnote is written on the long and narrow dining table and contemporary art paintings, the previous complex collision His emotions are unified, and the story of yesterday's infinite retreat and contemporary aesthetics happen to meet and be self-consistent here, forming a more tolerant new place.

The repertoire comes to an end, the crowd turns into a private space, the lights are low, the night is like washing, Shanghai outside the window is a real life, but in this scene of Hong 0871, it is also a wonderful background of human fireworks.

对于吴为来说,与滇菜大厨刘新的搭档无疑是一次令人兴奋的尝试,更加专注于菜品的主厨将餐饮空间的策略定制更多地交给了设计师来完成,设计师则凭借积累多年的餐饮商业策略经验为一道佳肴选择富有诗意出场方式,与传统餐饮空间设计服务相比,屋里门外的“策略餐饮”服务看似出圈,但实则是让空间成就品牌的必经之路,如果烹饪的最高境界堪称魔法,那么唯有以魔法成就魔法,为品牌创造惊喜。

For Wu Wei, partnering with Yunnan cuisine chef Liu Xin is undoubtedly an exciting attempt. The chef, who is more focused on dishes, has more of the strategic customization of the dining space to the designer to complete. With years of accumulated experience in catering business strategies, we can choose the best way for a delicacy to appear. Compared with traditional catering space design services, the "strategic catering" service inside and outside the house seems to be out of the circle, but it actually makes the space become the brand. The only way to go, if the highest level of cooking can be called magic, then only magic can be achieved by magic and create surprises for the brand.
